Serves 4+. You'll need:Re-hydrated some spanish chillis we got at a stall a while ago and made a paste with some of the water and spices.
Browned off, and made crunchy, some chorizo and then the beef in its oil. Made a base of minced celery, garlic, and red onion. Once that was soft I added in some tomato paste (not authentic Texan to have beans or tomatoes but Nicki wanted more veg in it), some stock, the chilli paste and all the meat back in.
Added a heap of other good stuff. Cayenne, chilli powder, some Encona chilli sauce, some of my BBQ sauce, tobasco, worcester, chipotle paste, liquid smoke, honey...and left it to cook all day.
