Thanks man. Got some Christmassy spices with the beef and caramelised onion and garlic filling, little allspice, cinnamon, nutmeg and ginger. Added some stock, Worcester, splash of rssperberry vinegar (this shit is amazing) and a scoop of dark brown sugar and bubbled it down to thick gravy. Added some chunky black kalamata olives picked off the stone, and sliced green ones stuffed with peppers, and let it cool down, then assembled them in the lard infused pastry. Pastry is fun. Dunk these in sriracha, happiness ensues.
Would be good to do it in a casserole dish (ours broke a while back - cheap rubbish), but it's all on the hob so any large pan with a lid will do.
Was really simple actually. Brown the thighs then take them out and cook chopped onions, leeks and bacon in the same pan. Add a thinly sliced apple for a minute, then put the chicken back in and about 250ml of cider, and salt. Simmer for about 20 mins until chicken is cooked. That's it.
I made some spaghetti and "bolognese" (out of a can) today, wasnt too bad
drunk some olde english with it, twas also alrite as always
now, time for some caffeinated drinks & grilled sandwishes & good movies oh yeah

Tucking into a trifle after paella, home cookin'. Â Drowned the sponge in port and lathered the custard on in spades and it's all the better for it. Â Grated choc on top for the dessert victory.
