Also I came up with a new sauce, if you like things that are delicious you could try making this. It's a twist on Memphis style BBQ sauce. I've messed with this recipe loads over the months, the only thing I would change at this point would be to make the ketchup from scratch too.
Nick's Sauce
Wet:
4 cups (500ml bottle) of ketchup
1 cup red wine vinegar
1 cup coca cola
1/4 cup brown sauce
1/4 cup of lemon juice
1/4 cup french's mustard
2 tblespns worcester
1.5 tblespns black treacle
1 tblespns chipotle paste
2 tblespns soy
1 tspn tobasco
1 tspn liquid smoke
1 tspn
Dry:
1/2 cup of granulated light brown sugar
2 tblspns of 100% grated cacao (pure chocolate)
2 tspns of BBQ rub (there are a 1,000 variations. Make your own.)
1 tspn La Chinata hot smoked paprika
1 tspn Santa Domingo sweet somked paprika
1 tspn pure chilli powder
1 tspn freshly ground black pepper
2 tspns of garlic salt
Put everything wet in a pan and bring to boil slowly. Tip in mixed dry stuff, cook slowly for further 40 mins till thick and delicious. Cool and bottle.
Note:After 2 days, the sauce matures into amuch more rounded flavour where the disparate elements you can taste on your pallette whilst cooking (smoky, spicy, tangy, sweet) marry together beautifully. Enjoy.
which diner did you go to cos? Can someone please take a pic next time as my experiences have always been pretty bad as i posted previously.
Nick, i could come and meet you for lunch if you could get to the diner?
Also, isn't it tayyabs in whitechapel which is the really well known indian? Vegetarian iirc but absolutely delicious and makes a mockery of the brick lane saga(loo).
When you said Lahore i thought of tooting high st.
He could've just said they came from another planet but seems keen to convince people with his bullshit pseudoscience that he knows stuff. I wouldn't trust him with my lunch. - SG
Tayyabs yes Tom and there's another one there called Lahore which is supposed to be amazing. I was due to visit last Friday evening but things got messy before that.
I'm not in lunch distance of the diner unfortunately - but give me a shout if you fancy hooking up this weekend as it's the same deal as ever, got to keep it low-key on the spending front before I go away.
Pretty nice London restaurant map. The two near me, The Yellow House and Simplicity, are really not that special. This might be why I'm such a streetfood nutter.
I made chilli last night. inspired by this thread I chucked in loads of extra ingredients. It was delicious, I like how this thread makes me cook better.
