Yes please man. I'm sure it'll be better written than the mess I poured out of my brain yesterday. I absolutely love the pibil here, would love to make my own.
1kg pork loin, cut into big chunks.
3/4 litre fresh orange juice
200ml white wine vinegar
50g dried guajillo chilis, rehydrated in water for an hour or so.(50g dried and deseeded etc)
50g block of achiote, disolved into a paste in a small amount of hot water
10 cloves garlic, peeled
a couple of shots of tequila or rum (optional)
Fry the meat for a few minutes in the bottom of a pressure cooker, until it's browned
Meanwhile put all the other ingredients, with a little salt, into a blender and make a smooth liquid.
When the meat is browned (but not cooked) add the liquid to the pot, bring to the boil, close the pressure cooker, let it reach pressure and cook for about 40 minutes.
Take out the pieces of meat and allow the mixture to simmer gently.
When the meat has cooled a little, shred it with your fingers and put it in a big bowl. Spoon in the liquid and mix it well.
That's it.
The salsa thing is just red onions with a little finely chopped tomato and red habanero soaked in fresh lemon juice. Add a small amount of coriander.
