    Shop bought ones are calorific as fuck, and I'm limited on availability of ingredients here. So, what's the best, no-fuss dressing you know?

  • I have olive oil...but getting "good" here might be tricky. I have Coleman's mustard powder, got it during the UK trip. Balsamic is buyable...but no idea about stickiness and the staff here certainly won't know. This is a country that organises red wine by price.

    Staff: you want to buy some wine?
    Me: yes, do you have any Shiraz? (Or other type, just an example)
    Staff: ...we have red wine...
    Me: yes, I know... but I'm looking for a specific type
    Staff: oh, OK? How much do you want to spend?
    Me: it's not about the price, I'm looking for...
    Staff: what about this one?
    Me: what type of wine is that?
    Staff: red
    Me: yes, but what type...
    Staff: French.

  • Coolio. And actually I don't walk out anymore, since I did find a place that sells good wine and has knowledgeable staff, even if it is a tiny bit pricier. So, win.

    Also, will check balsamic.

    You're not going to escape the calorie content of oil.

    Anyway, two thirds olive oil to one third white wine vinegar. Good pinch of salt and pepper, half a teaspoon of Dijon mustard. Put in a jam jar and shake the fuck out of it.

    Lime juice with chillies, salt and palm sugar if you want a south East Asian dressing.

    Thanks for the tips - both those could be manageable.

    As for "type" of salad, that's the issue, really...

    There's a limit on what I can get and the quality I can get. As a result, a lot of recipes that I look at have one or two really hard to get ingredients (actually, many I have no change if getting) especially guardian recipes...a lot of pulses, spices, and all that stuff...no chance.

    I can get a decent range of veg: tomatoes, cucumbers, spinach, celery, lettuce, peppers, but nothing "fancy" - that's not meant as an anti-snobbery thing, just the reality of what I'm working with in Chinese supermarkets.

    Fish and seafood is also available, but types are limited.

    Fruit, generally plentiful.

    Cheese - can get cheddar, feta, brie, camembert, and maybe a couple of other types, but there's no choice between "good" and "not good".

    Cured and/or thinly sliced Italian style meats can also be bought, but once again selection is limited.

    Can get hold of pre-cooked meats - chicken and duck especially. But no oven at home - they don't use them and I never replaced my old one after the move.

    Basically, I love salad, but making good ones with nice dressings has been a bit of a challenge over here. I've mainly been limited to a tasty salad of cashew nuts, prawns, and grapefruit in a sweet chilli dressing, which is lush as fuck but got a bit samey after some time.

    Help me Goober Wan Kenobi, u r totes my only hope. I'm fucked, innit?

    OK, how about cucumber salad with rice vinegar, fish sauce and lime dressing?

    1 cucumber, peeled, split down the middle and deseeded, then sliced into 5mm thick slices.

    4 spring onions sliced.

    2 red chillies thinly sliced.

    Shallots or sweet mild onions, whatever you can get out there. About the equivalent amount as a large onion, very thinly sliced.

    A handful of toasted cashew nuts.

    Handful of chopped coriander.

    Handful of chopped mint.

    Mix it all up in a bowl.

    For the dressing, 4tbsp rice vinegar (I'm assuming this is available?)
    5tbsp fish sauce
    1tbsp (give or take) palm sugar or brown sugar.
    Juice of one lime.

    Capsaicin stimulates the same receptors on the tongue as heat does, hence the heat. It may be caused by a chemical rather than radiation, but our physical response to it is the same.
