OK. Cake with top levelled off, turned over and coated with Apricot jam.
btw the bits I cut off the top tasted pretty good and not dry. Considering that bit got ever so slightly overdone I'm hopeful the cake will be moist enough.
....and now with marzipan applied. I cheated as I bought pre-rolled stuff.
My foster mum used to decorate cakes, my earliest happy childhood memories are eating cake mix and a day later icing sugar out of the kenwood mixer bowl
seeing that loose marzipan on the side makes me want to sneak into your kitchen and only be five years old and rob it off the counter top
Great work davy

I saw one the other day which was rather brill, christmas cake, they'd laid the marzipan and icing together, cut out a ginger bread dude shape, then laid the icing on top, and decorated the gingerbread mans features onto the fruit cake within, negative decoration, looked really good

So I've got the two Christmas cakes done and have been feeding them rum for the last month or so and will give them a final dose at the weekend. Do you need to leave the cakes for any length of time after a dose before you marzipan and ice them?
My two Christmas cakes, having had their final dose of Appleton Estate rum.
Planning on marzipan tomorrow night then icing on Saturday. If anyone's planning on doing this next year I recommend James Martins recipe - it's an absolute piece of piss to do.
Looking good. Martin's recipe is what I've used too. Yours look fruitier than mine. I mixed mine by hand though as I don't have a mixer - maybe you used one and have a better & more consistent mix?
That second picture makes the cake look enormous - those objects on the right look like the backs of chairs!!
Iced mine last night but didn't have time to take a picture. Will take one and post a picture when I sober up - out this afternoon.
The cake isn't quite as slick as it looks in the photo - the lighting is doing my cack-handedness some favours. Still , I'm pretty happy with the result. What will really matter will be how it tastes though....will report back Sunday night.
Apologies - I might look a bit smug having a bottle of Moet sitting in the picture. Wifey was in a panic trying to find a present for someone and was going through what fizz we have. (Answer : not a lot).
