I've just knocked out a homemade moussaka and it's in the oven now. It's been a while but I absolutely love it. A bit of cold side salad and a bottle of Barefoot Cab Sauv, yamas!

Just made pork fillet in a lemon, honey, pine nuts and parsley sauce. With fettuccine in a lemon, garlic and butter sauce and green beans with crispy Parma ham. Was delicious.
Beef rendang is near the top of my list, good choice.
I just polished off 2 whole bulbs of roast garlic with goats cheese on olive toast, I'm stuffed. Can't stop eyeing up a tube of salt and vinegar Pringles though.
Spatchcocked a chicken, I'm boiling up its spine with some herbs for a stock.
For the rest, I toasted peppercorns, coriander seeds, onion seeds, bay leaves and a little clove and cinnamon. Once blitzed in the coffee grinder I mixed with some turmeric, curry powder, chilli powder, and ginger powder, then grated in lemon zest, fresh garlic and finally the lemon juice and some olive oil. Salt to be added later, maybe this is superstitious but I always leave it out of long marinades, fearing its ability to suck moisture out, even though it's a wet marinade.
Wish I had the time and energy to spend more on cooking, have been really lacking there last couple of weeks. Thank God I get a crate delivered once in the month, full of fresh and local (but I'm not sure what that means anymore if it get's delivered through the whole country, used to be just Amsterdam and surroundings) food and recipes for 3 meals. Got one just now, looks to be a good week. One meat meal (with pork fillet), one fish meal (a Moroccan stew) and one veggie (haven't checked what that will be yet).
Cheers Nina. We also get a regular delivery of the basics. For chicken, it has to be a whole chicken every time because economical if makes so much better sense than portions. Because I've cooked so many of the bastards now I look for more interesting ways to serve 'em up, like the butterflied one there. Would have been all the better cooked over wood or coals but was still really good.
Never did a whole chicken at home, we had a couple in France (just bought at the market) which were really tasty. Got even more amazing when my mother in law showed how easy it is to use the leftovers and make a chicken curry salad (not sure if that's a thing in the UK, it's a kind of sandwich spread, would need to look up the ingredients) out of it, so we had some good baguette filling for the next day as well.
She also did a mean Spanish chicken dish in that week. loads of good tomatoes in there, and I remember aioli sauce, need to find out how she did that as well.
